Aged for a minimum of 12 months or more, this cheese is a labour of love. Washed with a mild salt brine in the initial months of aging gives this cheese a slightly sticky rind. Nutty, herbaceous, spicy and woody, the flavours evolve as the cheese opens up. This is best enjoyed with a glass of full bodied red wine.
